Here’s one New Orleans creation that we welcome to Charleston with open arms: Take six fresh oysters on the half shell, top them with parsley, butter, and sharp parmesan, then throw them on the grill till the cheese is melted and bubbly and just turning brown around the edges of the shells. That’s how they make them at Leon’s Fine Poultry & Oysters, and we suspect this signature Big Easy dish (made famous at Drago’s on Poydras Street) will soon become a Holy City staple as well.
