Every few months you pick up a big brown sack filled with small plastic packages of artisan sausages, bacons, and cured meats of all kinds. And then you hide it in the back of your fridge and nibble on guanciale and summer sausage quietly at night with the blinds closed so none of your neighbors know. That stash has to last three months, after all.
