The clever chefs in the cozy kitchen at Voodoo never seem to stop playing around with new dishes, flavor combinations, textures, and unusual ingredients. Sometimes, they revisit something totally basic and boring with a new approach. They might look like normal cylindrical hash browns, but Voodoo’s crispy and decadent Truffled Tots ($5.50) pack some seriously rich and earthy flavors. Fried with truffle oil (olive and sunflower oil infused with white and black truffles), they’re served on a platter with long skewers, smoked sea salt, scallions, and two side sauces — garlic and green curry aioli — for dipping. Great as an app for the whole table, or as a starchy feast for one.
