A true Neapolitan pie has a slightly charred crust and a soupy center, with ingredients from specific regions in Italy and fairly strict cooking methods. Many local pizzerias try to mimic the authenticity that’s found overseas, and while some come close, DeSano sets the bar for Neapolitan pizza in the Lowcountry. They have three massive Grande Forni ovens with floors made of volcanic rock from Mt. Vesuvius that fire upwards of 1,000 degrees and cook a pie in under 90 seconds. The same ovens are used to cook enormous calzones, and the cannoli are filled to order. Take it from us, DeSano serves a pizza that’s worth every penny.
