Joseph Fields has become one of the more prominent faces in the promotion of local agriculture, and he runs the only USDA-certified organic farm in the area. His collard greens are famous for their depth of flavor, and they (along with his potatoes and peppers) are reaching a wider audience in local schools as a result of the farm’s GAP (Good Agricultural Practices) certification in 2012. His family-owned farm also grows specialty items like rainbow carrots, jeweled beets, and several varieties of kale, which you can purchase at the farm. Fields provides produce to restaurants like Amen Street Fish and Raw Bar and to grocery stores like Whole Foods and Newton Farms. His “Pick Your Own” CSA allows customers to choose whatever vegetables they wish to consume for the week by weight, and his participation in farmers markets all over town — including the downtown Marion Square market — makes it easy to collect food as needed. Part of what makes Joseph Fields Farms so important to the Lowcountry is the way Fields preserves Gullah culture by planting and harvesting food the way he was taught as a child. A wonderful storyteller, Fields is happy to tell you about native plant cures for bee stings and spider bites or his brushes with death-by-tractor if you take the time to talk with him at the next farmers market.
