Owner and head brewer Ed Falkenstein has been cranking out a colorful variety of pale and dark ales (and one pale lager) at the Palmetto Brewing Co. since 1994. The company was the first microbrewery to open in Charleston since Prohibition. Falkenstein and his small team of brewers use fresh barley malts and hops in every brew. They recently expanded their regular roster of beers with a handful of clever seasonal ales and specialties. The fruity, hazy-golden Watermelon Wheat, made with melons from Legare Farms on Johns Island, pops up in warm months. The black, malty, roasty Espresso Porter features cold-extracted coffee obtained from their Huger Street neighbor, Charleston Coffee Roasters. Palmetto sends spent grains to Legare Farms and Rosebank for composting. —T. Ballard Lesemann
