Offal Selections



I’m all enamored with variety meats these days.  After frying up some bull testicles for the City Paper luau at the Barna ranch the other night, I began to to loathe the lack of “variety” that our insular little redneck town possesses.  We need places serving up stuff like these Grasshopper Tacos in NYC. I mean, outside of chitterlings,mountain oysters, and the occasional pig uterus, what else is available around here?  Anyone out there have any ideas? Suggestions are welcome…
