Nordic food camp for chefs

Chef Sean Brock (McCrady's, Husk) is heading to Denmark today along with his Chef de Cuisine Jeremiah Langhorne (McCrady's) and friend Jacques Larson of Wild Olive.

The occasion is the first ever MAD Food Camp, a Nordic event that promises, "knowledge on subjects like soil quality, vegetation, hay and compost will be shared like never before. Workshops, food installations, demonstrations and food talks will abound."

Larson, who is of Danish descent, says Brock invited him to go along unexpectedly, and after reading the spread in yesterday's New York Times, Larson can't believe his luck. The host chef is René Redzepi of Noma, a restaurant that has been named the best restaurant in the world, two years running. The topic at hand will be vegetables, with discussions led by the likes of David Chang (restaurateur/chef), Harold McGee (food scientist), and Magnus Nilsson (chef).

Brock expects the experience to be pretty special and promises to share what he learned when he returns next week.
