Opening in the old Johnson's Pub space at 12 Cumberland St., the Craftsmen Kitchen and Tap House will be a craft beer-lover's paradise. They will have two bars, one dedicated solely to IPAs, with 48 taps total. They also promise to have good food.
The idea, according to chef/partner Todd Garrigan, is to have a craft beer bar with "a stronger food program than one normally sees in a place devoted to a high volume of taps."produced most items in-house. Before that, he was the opening chef at Amen Street. Today, he's excited to be partnering with Philip Fisher on the Craftsmen.
"Philip and I have known each other for several years. He's been working on this concept for a long time and decided it needed a good food program, so he offered me the partnership," says Garrigan. "It is the dream of every chef to operate for yourself so naturally I jumped at the chance."
Much of the food will be crafted in-house. "We plan on grinding meats, producing pastramis and roasts, curing and aging, making breads, and, of course, all of our condiments and pickle varieties," says Garrigan.
Expect to see classic pub items on the menu like Scotch eggs, fish and chips, burgers, chicken wings, and a flatbread pizza or two. Garrigan will also have plenty of seasonal salads, soups, and entrées that will change frequently. They will serve lunch, dinner, and late night — seven days a week.
The idea, he adds, is to give beer the same treatment that wine gets in a place like Social, which incidentally is where Fisher worked as manager for several years. Fisher is part of the Poogan's Porch family and is the half brother of Social's owner/operator Brad Ball.
Ultimately, the Craftsmen Kitchen and Tap House will be a tribute to craftsmen and artisans, which will be reflected in the decor, the food, and the beer. To that end, they are working with architect David Thompson to transform the old Johnson's, and furniture maker Michael Moran is using reclaimed wood for the interior projects he's working on.
They are shooting to be open by the end of May, beginning of June.
