The Smoking Pot, specializing in the classic Lowcountry Boil, isn’t your average food truck.
“We’re more of a food trailer,” Andrew Postlewaite, the maker and founder, says. Postlewaite and his partner Andrew Krasny bring the boil to your home, and the idea has really taken off.
Postlewaite, kitchen manager of the Surf Bar, is training his replacement so he can focus on The Smoking Pot. After seeing large groups turned away at restaurants on Folly too many times, he decided to “find his niche.”
Here’s how it works: They come to your house equipped with tents, tables, plates, silverware, and, of course, the boil. They’ve got local corn, spices, potatoes, and fresh shrimp. The grass-fed sausage is the farthest trek they make for an ingredient — it’s an hour drive. The boil, homemade coleslaw, and key lime pie costs $24 a head. While the boil cooks (it takes about 30 minutes), you can enjoy local crab ($3 each) and oysters ($8 all you can eat).
“Food trucks don’t go to people’s homes like we do … No one should lift a finger while we’re there,” Postlewaite says. They have prepared everything from a romantic date on the beach to a 200-person party. Just be sure to make your reservation at least 24 hours prior, so the shrimpers and crabbers can get to shrimpin’ and crabbin’.
The Smoking Pot is hoping to join the food truck scene and bring the boil to the rodeos. “We would bring our trailer and serve family style from tables,” Postlewaite said. So keep them in mind for your next big gig and keep an eye out because “food trailers” could be the next big thing.
