What do you want to drink on a hot June day when you have a mouthful of expertly prepared brisket? That's the question Revelry Brewing Co. head brewer Ryan Coker and The Beer Exchange manager's Brandon Plyler have been mulling over for the past few weeks. Their answer? Something dry, clean, and crisp. Enter Lean and Fat lager. This morning they began brewing the new 4 percent abv. beer, which will make its debut June 6 for the launch of Revelry's Summer Barbecue Series featuring brisket mensch John Lewis.

By the time we arrived at 8 a.m., Lewis, Coker, Plyler, and Ben Garbee (Lewis Barbecue's new GM), had already been brewing the new beer  for the past two hours. Made with East Kent Goldings hops — known for their floral, lavender, lemon, and thyme overtones — Plyler says "the beer is meant to be consumed fresh." Thus the three-week lead time to get it prepared before the kick-off Summer Barbecue Series at noon on Sat. June 6.

The event marks the second local brewery partnership for Lewis since announcing the opening of his barbecue restaurant, Lewis Barbecue, at 464 N. Nassau St. which he plans to open later this year. His first joint venture was with COAST last fall for Brew & Cue. The two partnered up on "La Smoked Porter," a beer for which Lewis smoked 250 pounds of two-row malt in post oak. 

For the series with Revelry, Lewis will serve up his brisket and Texas Hot Guts sausage. "We're going to sell it by the pound, so we'll weigh each portion for you," says Lewis. That means you can come with your tupperware and take some to go if you feel so inclined. Right now Lewis plans to bring his small 500-gallon smoker, but if the Saturday series really gets cooking, he might pull out the big rig — his 1,000-gallon smoker — later on this summer. (Fun fact: Lewis and his dad make the smokers themselves out of recycled propane tanks under the name Austin Smoke Works.)

In addition to Lean or Fat, Revelry will have Achtung!, Midnight Special, Funkmaster Brett & the Furious Hops, Hotel Rendezvous, Oh My Darling!, and Mischief's Priory on tap.
