Take a look at Feathertop's menu before it opens tomorrow

Chef Damon Wise is on a roll this month. Last week he opened the first of his three new restaurants located along 23 Ann St., Wise Buck Smoked Meats, and on Friday he'll unlock the doors at his second, Feathertop.

As for the first, I got a taste last weekend at the restaurant. There's indoor and outdoor dining, but if it's a nice day, I'd highly recommend sitting outside at shaded picnic tables.  

Inside Wise Buck, the small space is divided into two parts, a to-go order counter where you can view your meat options through glass, and a bar with a cooler full of different beers and a bartender on hand to whip up a cold one. Well played, Mr. Wise. Nothing makes a parent happier post Children's Museum visit than a refreshing adult beverage. Come the heat of summer, me thinks his bar will crush it. 

As for the food, we dined on Wise Buck's pulled pork sandwiches (plated on camo paper to match the staff's aprons). Now pulled pork purists take note: this is not your traditional take. Don't go in expecting a Sweatman's-style sandwich. Rather, Wise Buck's version is, let's say, more metro. Wise plates his pulled pork with broccoli rabe and provolone. And the meat, well he says, "We brine the pork for a few hours, then we rub it with our proprietary spice mix, and smoke it over oak for 12 hours at 225 degrees." 

The best part of our small meal was the smoked corn on the cob. Wise coats it in his Buck's mayo, lime juice, and flax seeds which give it a surprising crunch. 

Tomorrow locals can get a look at Wise's second enterprise beginning at 5 p.m. when he opens the doors to Feathertop for dinner. 

The mood there has been explained as a touch more casual than Wise's third option, Scarecrow which is opening any day now. Feathertop will seat 65 indoors and will have a coffee program as well, run by a Nicaraguan coffeeprenuer (see what we did there?) Cesar Vega. The menu leans toward seafood and handmade pasta with a variety of vegetables dishes to begin.
