The Lowcountry's preeminent fish and chips shop, The Codfather, has finally revealed the name of its newborn: Port City Pie Factory, owner Adam Randall's new meat pie biz.

Randall has been planning pies all along. In fact, I believe he mentioned them to me the first time I interviewed him, months before his chipper even opened. Now, after a few months of R&D, Randall says the first batch of pies will be for sale this weekend at The Codfather.

"Right now we are doing a meat and potato — ground beef, fresh herbs and potato gratin. We line our pie tins with shortcrust pastry and lid them with puff," Randall says.

The England native adds that production will start out small, but much like the success of The Codfather, he hopes to grow the Port City Pie Factory business from there.
