Deihl opened Cypress in 2001
that this Sunday Cypress will serve its final meal, we've been wondering what the future has in store for Chef Craig Deihl. Finally, we have something of an answer.
Cypress' PR company has released the following statement from the chef and it appears that some much deserved time off is his first order of business following Sunday service.
"It has been a remarkable journey with HMGI,” said Chef Craig Deihl. “While the sale of the Cypress building is bittersweet, I leave the company with a wealth of experiences, friendships and lifelong memories. I have taken great pride in working with the Parsell family and HMGI for the past 22 years – first as sous chef at Magnolias for five years until the opening of Cypress in 2001. I am proud of the work we've done at Cypress over the last 16 years, and the past eight years developing Artisan Meat Share with notable Cypress chef de cuisine Bob Cook. Publishing my Cypress cookbook and being nominated twice and twice as a semifinalist for the James Beard Foundation have been career highlights as a chef to date. I am grateful to TJ Parsell and all of the colleagues along the way who both championed my vision and whose own devotion to their craft inspired me daily. On the immediate, I plan to spend some quality time with my family, who has been very forgiving of my schedule over the years. I’m looking forward to wherever Charleston’s great culinary landscape takes me.”
