— the forthcoming reinvention of Fish restaurant — has found an executive chef. According to a press release from parent company Patrick Properties Hospitality Group, Digby Stridiron will lead the kitchen.
Stridiron is a St. Croix native where he most recently owned and operated Balter. The New York Times
profiled Balter in 2016 and called it "a primer of West Indian cuisine." Think rum-laced bread and Danish-adapted red guava tapioca puddings. That influence will likely be seen at Parcel 32.
"I am honored to accept this job with PPHG and have the opportunity to showcase my cooking style, which will be seasonal ingredients with regional recipes that will represent the flavors and heritage of coastal Charleston. I am very passionate about the coastal south and am excited to be cooking in Charleston," say Stridiron in a statement.
Parcel 32 is expected to open this fall.
