This past year, there was no single food experience that could top Cook It Raw: BBQ Perspectives at Bowens Island. Local favorites such as Jeremiah Bacon, Sean Brock, and Mike Lata joined the likes of Albert Adria, Dan Barber, and April Bloomfield for a barbecue that emphasized the use of local ingredients and culture. For just a hundred bucks, guests got to experience dishes from each of the chefs in one location, which is a once-in-a-lifetime opportunity. We enjoyed barbecue beef tongue with pecan barbecue beans, whole roasted amberjack, and hay-smoked oysters. Rodney Scott was smoking whole hog while Brooks Reitz, of Jack Rudy Cocktail Co., and Jim Meehan of PDT in NYC were slinging cocktails. It was certainly an event that guests will never forget.
