Short Grain/Artisan Meat Share Collaboration at COAST Brewing

When two-piece noisemakers Jeff the Brotherhood played a concert inside COAST Brewing last year, Artisan Meat Share and Short Grain collaborated outside to feed the hungry show-goers. The main ingredient of the day was homemade AMS spam, which found its way into both fried rice and musubi. The star for me, however, was the AMS City Ham & Cheese Maki Roll. It was as delicious as it sounds ridiculous. The roll itself (ham, cheese, rice, seaweed) was fried, sliced, and garnished with house pickles, peanuts, AMS Korean Mustard (now bottled under Bob Cook’s Burnt & Salty label), and ponzu sauce. It was one of those bites that makes everything right in the world. —Timmons Pettigrew
