When Magnus Nilsson, the chef at the renowned Swedish restaurant Fäviken Magasinet, came to town to team up with Sean Brock for a special dinner at McCrady’s, he tried his hand at one of our local specialties. The result was an elegant bowl of samp grits with lemon, clam juice, and red bay that wowed the guests. It was the first time he’d cooked grits in his life. Beginner’s luck, I’m sure.
