Sometime in the 20th century, bartenders started debasing the once-noble Old Fashioned cocktail by muddling in a bunch of oranges and cherries and spritzing it with seltzer water. Not at Proof. They make their Old Fashioneds the old-fashioned way: muddle sugar cubes with Angostura bitters, then add Jim Beam Rye. Stirred, not shaken, with a strip of orange zest and a brandied cherry for garnish. It’s the original American cocktail in all its simple, old fashioned glory.
