Last summer, John Lewis introduced Charleston to his meat. Boy, we didn’t know what we were in for. We knew Lewis by reputation for his popular La Barbecue truck in Austin, so we were in for some good brisket. Our pork-picking hearts did not-yet know about his sausage. Let’s just say that we’re still re-enacting waiting in a blazing-hot line outside of Revelry last summer when we got our first taste of this game-changing ’cue. In any other world, Lewis’ prime brisket would be enough to satisfy any carnivore or curious greenie, but take our advice and order a sausage or six when you visit his upcoming NoMo brick-and-mortar location. Oh, and don’t forget to order a Revelry Lean or Fat to go with it. —Sam Spence
