There was a stretch over the last year where we found ourselves at our local haunts as usual, but instead of falling back on our favorite, tested menu items, we were ordering off a special, one-night-only menu from one of our other favorite locals who happened to be in residence that night. It happened multiple times: La Morra at Edmund’s Oast, Edmund’s Oast at Stems and Skins, Short Grain at Le Farfalle … you get the idea. We’re not complaining: In fact, we found it a useful way to treat ourselves to new flavors and encourage collaboration within Charleston’s creative culinary ranks. —Sam Spence
