Back in 1917, Herbert Hoover instituted the first Meatless Monday, encouraging Americans to cut their meat consumption. More than 116 tons was conserved. Today, there's a whole new campaign going on across the country, and Chef Michelle Weaver is participating over at Charleston Grill. And that's a very good thing for veggie lovers.
