You’re going to have to make some very special chicken if you’re going to unseat Home Team BBQ from atop their throne of wings.
From humble whisper campaign beginnings (“Have you tried the wings?”) from the bar at Home Team’s West Ashley location, Home Team says they now sell about 25,000 wings per week at their three Charleston restaurants — that’s over 1.3 million per year. (Great job, y’all. Good work.) The wings are smoked for about two-and-a-half hours and then finished in the fryer for a few minutes before they’re plated with a side of HT’s Alabama white sauce. Owner Aaron Siegel says he expected backlash when they started serving the sweet, mayo-based sauce instead of standard ranch or blue cheese dressing, but thankfully, that uproar never came. —Sam Spence
