Charlestonian wins recipe competition

Fish cakes are yummy

Charleston’s own Brent Bennett, a student at the Culinary Institute of America in Hyde Park, N.Y., was named one of five finalists in the Regal Springs Tilapia Recipe Competition.

Bennett, 20, and his tilapia cake recipe, modeled after the classic crab cake, beat out over 300 other entries. He entered the competition to help earn enough money to buy an engagement ring. Although he did not win the $5,000 grand prize, he did get $150 and a three-month supply of Regal Springs tilapia. Oh well, maybe he can sell his fish cakes to raise money for that ring.

The competition was judged on how effectively the contestants used the $15 they were given, in addition to creativity, ingredients, and thoroughness of instructions. Entries were judged by Chicago chefs Tony Priolo of Piccolo Sogno, Roger Herring of Socca, Chris Macchia of Coco Pazzo, and Dirk Flanigan of The Gage.
