Uncle Bubba’s Savannah Seafood cookbook is a living testimony to a Southern foodie family dynasty. Most may know Earl “Bubba” Hiers Jr. as Food Network celebrity Paula Deen’s little brother. She’s also the mother of Bobby and Jamie Deen, who authored The Deen Bros. Cookbook and host “Road Tasted” on the same network that made Paula famous. The Deen team also runs the ever popular, table-turning restaurant The Lady and Sons in Savannah’s historic downtown district.
As an Albany, Ga.-born and raised lover of foods diet magazines warn readers to stay away from, Bubba was also lured into the Savannah restaurant business and made a name for himself in 2004 when he opened Uncle Bubba’s Oyster House, where his sister films Food Network’s “Paula’s Party” that airs on Friday nights.
When Simon & Schuster came to him and asked, “How would you like to do a cookbook about family and friends?” Bubba replied, “Well, yeah, let’s do it.”
With a foreword by Paula and a nine-page introduction by Bubba, telling stories about how good food and good times have always kept his family close over the years, the reader soon learns Bubba’s a good ol’ Southern boy who loves trouble, Coca-Colas, and cookies.
He doesn’t claim to be a chef. Bubba knows he’s a cook.
These recipes, pulled from his restaurant and kitchens of family and friends, are the opposite of fancy and prepared with Sunday afternoon must-haves like sugar, oil, and heavy cream. In this easy-to-follow cookbook, readers will find instructions for down-home, stick-to-the-ribs kind of dishes like baked macaroni and cheese, cornbread, cheesy squash casserole, fried chicken, sautéed frog legs, and pecan pie — popular comfort foods Bubba says mommas and grandmas have been pleasing palates with for decades now.
