Cordray Farms

Michael Cordray runs one of the most interesting outfits in the Lowcountry. His County Line Road operation south of Charleston is the area’s largest local deer butchery and taxidermy shop, but it also houses a retail meat operation. Nights, which is when hunters bring in their kills, are an experience, and just hanging out watching the deer and occasional alligator come in can be a thrill in itself, but while you’re there, you might as well pick up some of Cordray’s beef, which is pasture-raised without chemicals, hormones, or animal by-products. The cattle are finished on corn too, which gives the meat the marbled fat that we’re accustomed to. They offer a beef CSA, too. As they harvest animals, you’ll be notified when your 1/8 of a cattle is ready for pick-up. The share is around 60 pounds of meat and includes standard cuts of steaks, roasts, stew beef, stir-fry and hamburger. You can also reserve a side of beef, a “burger box” of ground meat, or go in with family and friends for an entire cow. Cordray Farms recently began doing custom slaughter, meaning if you raise your own sheep, goats, or cattle, they will “custom harvest” those animals for you.
