Todd Lucey’s Slice Co. may be the first Workshop business to have fully completed the model founder Michael Shemtov envisioned — the incubator food court was created to allow fledgling restaurants an opportunity to develop their brands while operating a small stall with the hopes that one day they could make a go of it on their own. Lucey and Slice Co. left Workshop in June 2018 and shortly after moved into a brick and mortar in the same West Ashley shopping center as Five Guys Burgers. They sell ‘za by the slice and 18-inch pies, plus additonal items like salads, garlic knots, and meatballs. If you’re hungry — like really hungry — look out for the grandma pizza with fresh mozz, San Marzano tomato, anchovy, garlic, EVOO, and fresh herbs. Off the gluten?
